Project Scope

The Optimum Group was retained to direct the development, pre-opening and transition operations of a newly renovated 3,500 square foot restaurant in Outer Banks, NC. The concept was developed with a team of highly successful restaurant professionals including the managing partner and chef. Optimum’s role was to organize, plan, direct and efficiently administer the development, construction and assist the managing partner with developing the day -to -day activities of the restaurant through a transition operational period.  Initially, the effort included creating the concept followed by developing the  pre-opening and operational budgets, as well as required opening tasks and timeline. Upon completion of the financial and schedule requirements, Optimum assisted in the project development, coordination and oversight of the architect, engineer(s) and general contractor. Finally, Optimum developed the restaurants administrative policies including all operations, personnel, and training manuals.
