In a two-phase approach, The Optimum Group was retained to direct the kitchen redesign, equipment procurement and provide project management to assist Marcel’s in the remodeling of this award-winning, successful and highly respected restaurant located in Washington DC. The proprietor of Marcel’s is Chef Robert Wiedmaier who rose from the ranks of dishwasher to earn a Michelin star and own and operate 11 restaurants in Washington, D.C., Virginia, Maryland, and Atlantic City. This effort included our collaboration with the leadership of Marcel’s to fully understand their goals.
During Phase I, Optimum’s role in Pre-Development included initial programing, securing a cohesive project team including the architect, kitchen and bar design firm, engineering, and a kitchen equipment company. Through completion of this successful project, Optimum represented Marcel’s best interests, managing the project team, providing expertise with regard to design and equipment selection and ensuring the highest quality final product.
