Project Scope
The Optimum Group was contracted to complete a full assessment, performance evaluation and analysis of the 21,500-square foot foodservice facility associated with the cafeteria at their 3,500-employee international headquarters in Bethesda Maryland. Initially, Optimum was asked to complete a performance evaluation of the third-party operator, Sodexo, that was the incumbent operator providing all cafeteria and catering foodservice operations for Marriott. This analysis included the determination if a renewal of the contract was warranted or whether a new RFP solicitation should occur that may result in a selection of a new operator.
Further, in advance of a complete renovation of the physical facility, most specifically the servery and the dining portion of the cafeteria, Optimum was asked to assist in the layout and design of the new renovation project that also included a survey of all its foodservice equipment to determine its existing condition, as well as its future usefulness for the new operation.
In addition, The Optimum Group conducted a full-service quarterly Quality Assurance Program. This effort was inclusive of both kitchen and service elements. This program included (4) quarterly customer service oriented evaluations and (6) back-of-the-house sanitation and safety audits (main and catering kitchens, servery, storage, service & support areas).
